Saint Teresa of Avila Candied Egg Yolks




This is my first attempt at such a confection!  I only got six out of this recipe, perhaps if I scraped the bowl a bit more, I could have got a couple more - but with the fragrance of the lemon and cinnamon, the temptation was too great to leave that extra bit behind for 'cleaning up' while my candy cooled.  I'm looking forward to future batches - they're so easy to make! - maybe some with ground almonds, maybe some with vanilla, maybe some with a splash of brandy..!  Here's how I did it today....




5 egg yolks, 1 tsp cinnamon, 1 tsp lemon juice, zest from half a lemon

Whisk that together.

Bring 100 grams of sugar, and 1/4 cup of water to a boil.
Reduce to medium-low and simmer until it reaches the soft-ball stage, about 240 F.
While this is simmering, line a cookie sheet with lightly greased parchment paper.

When the syrup reaches the soft-ball stage,
whisk the yolk mixture into the syrup.

Turn up the heat to medium, keep stirring briskly..


until it looks about like this.  (You may have noticed the change in
utensils.. I'm still figuring this out.. keep it moving, keep it smooth!!)

Spread mixture out on the greased parchment paper, and when it
is cool enough to do so, form into a log.  (I chose to temper mine by
spreading and folding in alternating directions until cool.)

Cut into pieces.

Roll into balls, then roll lightly in powdered sugar to dust!

Mascarpone Cream with Candied Orange Peel


Oh Ada!  Your dessert was a hit!

To give credit where credit is very well due:  this post was inspired by Ada's post over at Siciliani Creativi in Cucina, where I discovered and was eager to try out her recipe for Crema al mascarpone con mirtilli e arance candite .  Now, over on her page, at least according to Google translate, her recipe is a quick 15 minute solution for when you suddenly find yourself with company.  That's all fine and good.... but it's a bit more than 15 minutes when you make your own mascarpone and candied orange peel!!!  At that point, it's a two-day labour of love!  Due to a busy few days, however, I did give myself a break and used store-bought biscotti!!

A New Beginning Pasta Sauce!


It's been a while since I've posted!  I've been a bit preoccupied over the past few months, and even meals around here have been few and far between, so there hasn't been much to blog about.  But alas, here I am, emerged from my cocoon, freshly inspired and ready to go!

I checked my freezer, and found I was fresh out of mirepoix.  That was my cue, it was time to shop again.  This post: sauce.  Next post:  potato ricotta gnocchi.

Hancock Gourmet Lobster

So, this is cool!  My first post where I've been sent a product to review!!!  That's exciting in and of itself.  Also cool - it involves LOBSTER, and as you'll read a bit later on, MASCARPONE!!!

A couple weeks ago, I responded to call-out from Foodbloggers of Canada, looking for members to review a product from Hancock Gourmet Lobster, with the choice being Lobster Pot Pie or Lobster Mac & Cheese.
